Res Ipsa Liquitur (Japanese Whisky Old Fashioned)
Ingredients:
- 2 oz (¼ cup) Suntory Toki
- ½ oz (1 tbsp) Plum & Apple ginger syrup
- 2 dashes angostura bitters
Preparation:
- Add all ingredients to mixing glass
- Fill mixing glass with ice (two fingers from the top)
- Fill chilled rocks glass with ice too
- Press the back of your bar spoon into the glass and slide down to the bottom of the mixing glass
- Stir for 40 rotations (20 seconds) focusing on stirring at the base of the glass
- Strain cocktail into glass
- Garnish with three thin slices of green apple
Plum & Apple Ginger Syrup
Ingredients:
- 1 plum
- ½ green apple
- 2 lemon peels
- ¼ tsp ginger powder
- ½ cup sugar
- 2 pinch salt
- ½ cup water
- ¼ tsp rice vinegar
Preparation:
- Using vegetable peeler remove two lemon peels from lemon
- Slice plum and half apple into small pieces
- Add fruit and lemon peels into mason jar
- Muddle to release juices and oils
- Add sugar, salt, water and rice vinegar
- Attach mason jar lid
Justice Juice (Clover Club)
Ingredients:
- 2 oz (¼ cup) gin or tequila
- ½ oz (1 tbsp) dry vermouth (optional)
- ¾ oz (1.5 tbsp) lemon juice
- ½ oz (1 tbsp) berry syrup
- 1 egg white (or ⅛ cup aquafaba)
Preparation:
- Add egg white to shaking tin
- Juice lemon into small glass, measure out ¾ oz (1.5 tbsp) and add to shaking tin
- Add syrup, dry vermouth, and alcohol to shaking tin
- Shake ingredients without ice for 30 seconds to activate egg white foam
- Add 1½ cups of ice and shake for an additional 7 seconds
- Strain into a chilled coupe style drinking glass
- Garnish with berry or lemon wheel
Alcohol-Free Clover Club
Ingredients:
- ¾ oz (1.5 tbsp) lemon juice
- ¾ oz (1.5 tbsp) berry syrup (used ⅓ cup ½ sugar ½ water)
- 1 egg white (or ⅛ cup aquafaba) (optional)
- 3 oz (¼ cup + 2 tbsp) seltzer*
Preparation:
- Add egg white to shaking tin
- Juice lemon into small glass, measure out ¾ oz (1.5 tbsp) and add to shaking tin
- Add syrup to shaking tin
- Shake ingredients without ice for 30 seconds to activate egg white foam
- Add 1½ cups of ice and shake for an additional 7 seconds
- Separate shaking tins and add 3 oz seltzer to cocktail
- (this way you do not have to stir)
- Strain into a chilled coupe style drinking glass or chilled rocks glass with ice
- Garnish with berry or lemon wheel
*shaking cocktails with carbonated beverages will cause the bubbles to flatten and might cause your shaking vessel to explode. Add sparkling beverages to your cocktails after you’ve shaken your drink!
Berry Syrup
Ingredients:
- ½ cup sugar
- ½ cup room temperature water
- ⅓ cup berries
Preparation:
- Add all ingredients to mason jar
- If using frozen berries defrost before using
- Attach lid and shake until the sugars dissolve into the water
- Strain berries from syrup. Discard solids
- You can keep the berries in the syrup, but it might get messy when pouring syrup later as the fruit bits fall into the measuring device
- Store in refrigerator for up to 10 days
